Ice cream for you, for us, for everyone

            Ice creams are very popular especially during summer time. It cools down our body that contrasts the heat we feel inside. Kids and adults love ice cream because like other deserts it is delicious and has a creamy taste. It comes in various flavors and colors. Ice creams, cakes and chocolates are the famous desserts we know and the most commonly we see in different stores.
            Ice cream is a frozen food combined with fruits and other ingredients. It contains sugar and has also sweeteners. In other times, there are flavorings and colorings added to ice creams. The meaning of ice cream varies in every country. The most popular flavor of ice cream is the vanilla and chocolate.
            Like cakes, ice cream also has different types these are the hard ice cream, soft ice cream, French ice cream, light ice cream, reduced fat ice cream, no sugar added ice cream, lactose free ice cream, gluten free ice cream, organic ice cream, Italian style gelato and fat free frozen dairy dessert. Ice creams have also sugar that is why it is sweet. Filipinos really like sweet foods, not only spicy foods because this dessert became popular in our country. Summer time is the hot time we are experiencing and we buy ice cream to ease that warm feeling.

            Ice cream can also serve after meals as a substitute to fruits. You can make an ice cream at your home if you do have ingredients, here is the recipe for the chocolate ice cream that is popular and surely kids will like. For the ingredients, you need one can sweetened condensed milk, two cups of heavy cream and one chocolate bar of your choice. The first procedure is that you have to break the chocolate bar into small pieces and melt it in the double boiler or in the microwave oven if you have. Second, when the chocolate is melted completely, remove it from the heat and stir the can of sweetened condensed milk and mix it. Set aside. Next, In a separate bowl, you have to use an electric hand mixer to whip the heavy cream until stiff peaks off. Then, combine the whipped cream and chocolate mixture, fold it together until it is completely integrated. Lastly, store it in an airtight container and freeze for additional two hours.
            Serving Ice cream as a dessert will surely excites the kids to eat their meal so that they can now eat their share of ice cream. Ice cream also has healthy version because there are some that has vegetables as one of its ingredients. Some of these are the dairy fruit and fruit based ice cream, peach and basil sorbet, coconut or soy base, chai coconut ice cream, and coffee coconut ice cream.

In other times, eating ice cream lessen our stress and like what my friend told me, it can less the madness you are feeling. Ice creams bring pleasure and happiness. Whatever term it has, sorbets or sorbet the only meaning for the ice cream lovers is that it taste creamy yet cold. There are many business featuring ice creams as their main course especially the stores for desserts. And it become popular because ice cream is one of the Filipino choice for desserts.
Cakes is for joy

                Cakes is one of the desserts that we serve every occasion we celebrate. It is one food we can’t say no because like chocolates, it is sweet and many people loves to eat. It comes in different flavors, sizes, colors, weight and layers. It is a bread-like food that is bake. Some are affordable and some are expensive especially those that came from good branded names.

                Cake is a combination of sugar, flour, eggs, butter or oil with some varieties that requires liquid and leavening ingredients like yeast and baking powder. The fruits, nuts, dried or candied fruits are often added to enhance flavor and taste. Cakes are often filled with fruit preserves and dessert sauces. Cakes are often served particularly during weddings, anniversaries and birthdays. There are different flavors which kids like. Not only kids but also the adults especially those who have sweet tooth. There are different varieties of cakes:  yeast cakes, cheese cakes, sponge cakes, butter cakes and many more.
                Cakes are serve depending on what occasion is being celebrate. When the occasion is a birthday party, the common themes are the cartoon characters which kids like. There are their favorite heroes and anime characters.  When wedding, cakes are often designed to the theme the couple wants. Usually, there are small figurines on the top of the wedding cakes that symbolize the newly wedded couples. At holidays, like Christmas day or New Year, the cakes are serve with different colors and with greetings like “Happy New Year and Merry Christmas”.
These cakes come in different shapes. The common shapes are: cake balls, bundt cakes, layer cakes, cup cakes, sheet cakes and many more. Cakes are decorated with icing or frosting that comes in different colors and also toppings like sprinkles which are also known as “jimmies”. In United States, cakes are usually made from powdered sugar icing. There are also various tools that are needed in baking the cakes and decorating them to make it look delicious and more presentable.

During Christmas and Birthdays, my family and I serve cake for the celebration. My parents buy cake at the cake store according to the celebration we are going to celebrate. This could symbolize a happy celebration with my family and sometimes with my relatives. This is also memories that we made with our loved ones.  When there are birthday parties in our neighbors, they also have cake as the center piece of their tables. These cakes are divided to the family and visitors. According to Swiss theory, “A birthday-cake must have lighted candles arranged around it, one candle for each year of life. Before the cake is eaten, the person whose birthday it is should blow out the candles one after another”. It means that each candle in the cake symbolizes on how many years the person who celebrates his birthday is.
There are many options you can have to somewhat avoid disease. There are healthy cakes that are made up of vegetables. One is the pumpkin cake which has pumpkins as the major ingredient. Next is the yellow tomato cake. The others are the: courgette cake with lemon curd, black bean brownies, coconut sweet potato cheesecake, rainbow fruit and vegetable cake, pumpkin cupcakes and the carrot cake. There are many healthy vegetable cakes but I can’t enumerate it one by one.

People, who have sweet tooth, don’t get contented on sweet goodies they eat until there are more. We all know that many people love sweet. But, base on the saying: one is enough, two is too much and three is a poison to kill a person. This simply say that everything that we eat must be just enough for us because going beyond our limitations may harm us. I am only saying that we must be contented when we are already full and not seek for more foods and eat. Talking of threats to our health, diabetes is the common disease and one reason is the too much intake of sugar from the foods we eat.  So we must be conscious and we must take care of our health so that we will not regret at the end.

                
Craving for Chocolates

                One great thing about chocolates? You can make it whenever and whatever manner you want! Anything that your heart wishes! Serve it during birthdays, weddings and christenings.  Then add more ingredients like almonds, fruits, caramel, nuts and other sweet cravings. What more can you ask for? There are full of excitement when the chocolate is on the table. Everyone wants to pick one and enjoy the melting feeling with the sweet and creamy taste.
                Chocolates are products derived from cocoa mix with fat and finely powdered sugar. Many people love chocolates because of the sweetness it have. For those with extra sweet tooth, they collect all sorts of candies including chocolates. It somehow brings different level of comfort to the body and to the soul. For some people it’s a sort of addiction and wants that they wish they would never go empty. For others, it is a measure of how strong you are in eating chocolates. Because some people doesn’t like sweet foods they easily gets contented in eating few. Chocolates, it also brings an energetic feeling because it is high in sugar content.
                Chocolates have come a long way from its origin throughout the world. Some worship it because for them it is some sort of heavenly creation that brings pleasure. And I agree with it. We love to eat chocolates during holidays and anytime in between. At first look, it seems so ordinary but when you taste it, its simplicity turns into indulgence and every bite is worthwhile.
                Chocolates, choco, tsokolate, chocolat only means one thing for everyone who eats it, and it is pleasure and happiness. Whatever form of chocolate, whether it is a chocolate cake, or chocolate ice cream and whatever form it has, circle, square, rectangle, heart, diamond, oblong or star shape it is only one- a chocolate.
                Chocolate is kind of food that we take in addiction seriously. And because many crave for chocolates, many businesses worldwide who put store featuring chocolates. Chocolate also was given in any occasion, anniversary, Valentine’s Day, birthday, monthsary and also weddings. Because it is affordable and easy to eat. One chocolate for those who have sweet tooth is not contentment. They seek and look for more. They will eat until they can and until there are more.
                Many families serve chocolates as a dessert every after lunch or dinner time because it is within your means and easy to serve up. You can melt it, grind it, freeze it and even bake it. One reason why many can’t get enough with chocolates is that it is creamy, light and of course, the very obvious, it is sweet. There are different types of chocolates. The first one is the white chocolate; it is based on sugar, milk and cocoa butter without the cocoa solids. The second one is the dark chocolate which is also called as black chocolate is produced by adding fat and sugar to the cocoa. Dark chocolate is not that sweet unlike the milk chocolate. It is chocolate with no milk or much less than milk chocolate. The third one is the milk chocolate. It is a solid chocolate made with milk in the form of milk powder, liquid milk or condensed milk. Many put up stores that sell chocolates because there are lots of chocolate lovers and also the gentleman who give chocolates to their loved ones. Chocolates are somehow called “Food of the Gods” because it taste heavenly as they describe and very delicious.
                Chocolates especially dark chocolates are also good for the brain. According to doctors, dark chocolates are good for the brain especially when you are reviewing lessons and topics. Also the nuts that can be one of the ingredients mix with chocolates are also good for the brain. Dark chocolates and nuts are considered food for the brain.
                Chocolates have come a long way from its origin it evolves as years pass by. Many ingredients are mix with chocolates because these ingredients can enhance the chocolate’s flavor and the chocolates taste. Many people especially chefs do experiments with chocolates, they try and add other ingredients that will combine perfectly with the type of chocolate. So, I will not get shock if one day, chocolates have strange twist that will be popular to the people.


                 Aromatic Vietnamese Beef Stir fry is the star of the night

Aromatic Vietnamese beef Stir fry is a good reason to stay at home and cook it instead of struggling in a large crowd just to order it at a restaurant. Like other recipes, it is spicy and healthy enough food for you and your family. And because it is a Vietnamese dish which is one of the Vietnamese cuisines, it encompasses the foods of Vietnam and has a good combination of fundamental taste elements (the spices and other ingredients) in one big overall meal. This is a fast dinner solution that your family will like.
                This Vietnamese dish has a different flavor which reflects one or more of its ingredients. According to research, traditional Vietnamese cooking is greatly admired because of the fresh ingredients it has. It also uses less oil and has herbs which give the food an aromatic smell. Vietnamese foods are considered one of the healthiest cuisines worldwide with the balance between fresh herbs and the meat and a choice of spices use that result to a fine and good taste.
                If you have free time and you want to taste one of the foods that came from the healthiest cuisines worldwide, cook this one at your home. For the ingredients, you need 2 tbsp. peanut oil, 800 grams beef strips, 1 medium brown onion (chopped finely), 1 long red copped chilli, 3 cloves of garlic (crushed), 10 cm stick fresh lemon grass, 4 cardamom pods (bruised), 1 star anise, 1 cinnamon stick, 2 tbsp. ground bean sauce, 2 tbsp. fish sauce, 350 g snake beans (cut in lengths), ½ cup coarsely chopped fresh cilantro, ½ cup roasted almond flakes. Here is the procedure:  First, heat half of the oil on the pan and fry the beef in batches. Stir it until it becomes golden brown.  Remove it on the pan and put it on one bowl and cover to remain hot. Second, heat the other half of the oil in the pan. Fry the onions and put the garlic, chilli, lemon grass, star anise, cardamom, cinnamon and beans. Mix. Next, remove the star anise, cinnamon and cardamom. Return the beef to the pan and add the sauce. Then, stir it and add the cilantro. Lastly, serve it to your family.

                For a healthier version, add some vegetables like broccoli, bean sprouts, asparagus and also bell pepper. If you still have time, cook a side dish that will be a perfect combination with the beef stir fry, try to have stir fried broccoli or a pomelo salad.For a fishy taste, you can add fish sauce.Enjoy this Aromatic Vietnamese Beef stir fry with a bowl of steamed rice.And because it is stir fried, it is quick to cook and exciting to eat.    Take the challenge of the Dynamite Lumpia

Foods bring pleasure to some people. Especially when the foods they are eating are their favorite ones. It somehow lessens stress which we get from fully loaded assignments, projects, schedules and appointments. Foods also mean happiness because when a chef serves the food and his/her customer like the food he/she serves, the chef will feel like he/she is doing something right.
                Filipinos are very creative not only in art but also in foods. From simple street foods to fast food chains and to the expensive restaurants, they think of a way on how it will look more delicious and more presentable for the customers. They also add twist so that the old recipes will enhance in flavour and it will become famous or popular when the twist applied is approved by the customers. Bringing such simple food to a different one is not an easy job. It takes time to think, to decide and to get the perfect combination of spices from many experimentations and trials. It takes time to think on what food will be a pop-talk for consumers.
                
              Talking of twists on food, here’s one that somehow a little bit strange, the Dynamite Lumpia. It is not only a street food; it is also for home dish and for restaurant dishes. From the original Lumpiang Shanghai which was made only from ground pork, spices and wrapped in a lumpia wrapper, it has now another version, a spicy one, the Dynamite Lumpia. Since Filipinos like spicy foods, especially the Bicolanos which were known for their Bicol express, this dynamite lumpia became famous and suits the taste of our countrymen. The dynamite lumpia has a green chili as one of its stuff and when you eat it, it is spicy because of course, of the green chili. That is one of the basic reasons why many Filipinos like the dynamite lumpia.
                If you are a certified spicy food lover and want to try the dynamite lumpia, here’s the recipe from “ Yummy easy meals every day”:
Ingredients:

2 tablespoons vegetable oil for sautéing
1 medium onion
3 cloves garlic
 1/2 kilo ground beef
1 (40-gram) pack taco seasoning mix
salt and pepper, to taste
20 finger chilies (siling pangsigang)
20 spring roll (lumpia) wrappers
2 cups grated Cheddar cheese

3 cups vegetable oil for frying 
Procedure:
First, heat the oil in the pan and sauté the onion and garlic. Second, add ground beef and taco seasoning. Season it with salt and pepper to taste. Cook for 10 to 15 minutes. Set aside. Next, assemble it, lay a finger of chili on a sheet of lumpia wrapper and add 1 tablespoon of ground beef mixture and 1 tablespoon cheese. Roll and seal. Repeat until done. Then, heat the oil in a frying pan. Fry the Dynamite Lumpia until it is cook. Lastly, serve it.
                The recipe of the dynamite lumpia is just like the recipe of the lumpiang shanghai. The only difference is that there is a spicy flavor because of the green chilli. Young, teens or even old ones take the challenge to taste dynamite lumpia. They said that it is not too spicy that is why it is okay to eat more and more.
                When you look at the dynamite lumpia, you have to think twice before eating one because. Yes, it looks delicious yet has an intense flavor. But when you are a spicy food lover, quickly grab one and eat more. Another reason I think why people love it is because they combine it with their favorite dips. The usual dip that is perfect for the dynamite lumpia is the vinegar. But of course, all of us have our own favorite that is why people look for other dips that will suit their taste and is perfect partner for their dish.
                For those people who are craving for cheese and with the touch of a spicy flavor, try the dynamite lumpia with a cheese. You could eat it with your bare hands and with or without a dip. It will definitely fill out your satisfaction.
                Many people are now trying to cook the dynamite lumpia at their home with the desired flavor they want. I am very sure that among those who have tried, they are very satisfied with it. And I will not get shock if some time the dynamite lumpia will have another twist because, we Filipinos love to eat. The ideas of making another version of the food we eat and trying another one puff out on our mind.
                The dynamite lumpia was also eaten by those people who usually drink beer. They used it as their “pulutan”. I can say that those people, who are drinkers of alcoholic beverages like the beer, don’t find the dynamite lumpia as a spicy food. According to some experiments, it is tested that the best way to remove the spicy taste on your mouth is to drink a glass of beer. That is why they keep on eating dynamite lumpia even though they see that it has a green chilli.
                So if you’re going to try one, surely it will have a hot effect to your mouth and will make you drink glasses of water. Then, think twice before eating one!





Indulge in the sweet-spicy taste of this Afritada "Afraid-tada"

                 I can say with the utmost frankness that as much as possible, I will only eat my mother's recipe of foods. I don't know what is in my mouth that whenever I eat the foods cooked by others, I don't like it that much. I always compare those foods to the ones my mother had cooked before. It is always how delicious the foods are, the taste, the flavors they have that I have been always looking for. maybe, it is because my mouth is set and reserved for my mother's recipe that whenever I eat, I always make it to the point that I’m not full so that when I go home, there is a place for my stomach to fill in with the foods my mother had cooked. 

                  Every occasion that we celebrate, my mother is always the one who is assigned to cook the different dishes to be served to the guests and relatives. Our neighbors and also my mom’s close friends took her to cook when they also celebrate birthdays, christenings, and also weddings. I can see that they are also satisfied with the taste of the foods my mother had cooked and they appreciated it because every time they celebrate and repeat the same occasion, they always call my mom to cook for them.
            One of my favorites among my mother’s recipe is the afritada because I love the potatoes and the sauce is delicious. When my mother cooked afritada, I use to call it “Afraid-tada”. My mother put a little twist on her recipe of afritada. She made it a little spicy because that is what her customers are looking for. Especially, those people who often bought dishes to her. I used to call it “Afraid-tada” because I don’t like spicy foods. I’m not good in eating spicy foods even though its flavor is sweet and spicy. Another thing I don’t like with that afritada is that it gets more spicy as you continue eating it. That is why when I have no choice, but to eat the afraid-tada, I always have a glass of water by my side so that when it gets more spicy, I will drink a mouthful of water. About that afraid-tada, I ask my mom how to cook it. So, here it is, my mother’s version of afritada.


Ingredients:

Chicken, cut into serving pieces
1 large potato, quartered
1 teaspoon granulated white sugar
4 tablespoons cooking oil
1 large carrot, sliced
8 ounces tomato sauce
4 garlic cloves, minced
4 pieces hotdogs, sliced
1 medium onion, diced
1 large bell pepper, sliced
1 cup green peas
2 pieces dried bay leaves
Salt and ground black pepper to taste
chili sauce
1 1/4 cups chicken broth or stock

Procedure:


First, heat the cooking pot or casserole then pour the cooking oil. Second, fry the chicken until it is cooked and its color turns into light brown. Next, remove the chicken from the cooking pot. Set aside. On the same cooking pot,  sauté  the onions and garlics. Put in the hotdogs. Pan-fried the chicken then cooked it for minutes. Pour in the chicken broth and the tomato sauce, add the bay leaves then simmer it for about 30-35 minutes. Add the potatoes and carrots. Simmer until the vegetables are cooked. Put the green bell pepper, green peas, and sugar. Season it with salt, chili sauce and pepper then cooked it for 3 minutes. Lastly, turn off the heat and served with steamed rice.
That was the food I somehow get afraid of to eat. Every time my relatives visit at our house, they request or look for the afraid-tada. Also my cousins appreciate it. They love the sauce it has. When my mother serves it, everyone is eager to take a spoonful of it because it really looks and smells delicious. Not only a food for the eye, but also food for the stomach.
                One lunch or dinner as always is reserved for afraid-tada even I don’t like its spicy flavor . Its soft tendered meat in tomato sauce with fresh and good-cooked vegetables is perfect with the steamed rice. It tastes good and saucy.
                I know that mother doesn’t finish a course of culinary arts but I think, it is her experience that made her good in cooking. So whenever we go home from the school, and the afraid-tada is on the table, my siblings and I automatically take a plate and serve rice. Even though it is a little bit spicy, I also serve my own and eat. No need for my mother to say “serve rice and let us eat”. Unlike the other days when we have a different dish, especially when it is a vegetable, my siblings sometimes lack the strength to eat anymore then my mother got angry.

                In the past few years, eating has been a personal satisfaction and a social activity for many Filipinos. They even try all sorts of cuisines from the different parts of the world and I’m sure that there are already foods that suit their taste. Filipinos also like experimenting and trying new things so that is why old dishes came different as years pass by. Simply because Filipinos are creative and they create a twist for their favorite dishes. Like the afritada which was before, sweet but due to my mother’s customer request, it now became “afraid-tada” which was a little bit spicy. So, if you like to taste afraid-tada, come and do visit our house.
Taste these CHICKEN CROQUETTES

Looking for more affordable, delicious and yet a meaty food? You better try this Chicken Croquettes. It is cheaper compared to the other dishes because it makes use of chicken. Unlike the pork or beef which are costly and some can’t afford to buy one because it is somehow expensive. If you like to serve some special and a different dish and have only a little budget, why don’t you try to cook Chicken Croquettes.
                Miniature fried foods like patties and also the fillings of the Relyenong Bangus are some of my favorite bites. I’d like to eat anything bite-sized that is fried and crispy. And based on the internet’s description, these Chicken Croquettes offer something a little different from those miniature fried foods I have tasted before. According to the internet, the Spanish version of these Croquettes are bound with a thick, buttery cross between béchamel sauce and egless pate a coux dough. The base which is floury is mixed with the ground meat, either pork or fish and cooled. Then it is shaped into cylinders but in other version, it can be circular. Based from the word “Croquettes” which means a ball of ground meat, fish or potato seasoned and fried brown.  The term Croquettes comes from the French word croquer which means “to crunch”.And because of the butter as one of its fillings, the Croquettes taste a bit creamy and its lush interior that spill out or comes out when you bite the crispy breadcrumb coating.
                If you do want to try this Chicken Croquettes at home, I will recommend you this recipe which I got from the magazine.  You need 2 chicken breast fillets, each weighing about 150 g, 2 tbsp. Olive oil, 3 eggs, 2 tbsp butter, 3 tbsp flour, 1 ½ cup of milk, salt and pepper, 1 ¾ cups breadcrumbs, 1/8 tsp. ground nutmeg and an oil for frying.
Here is the procedure. First, fry the chicken breast to the olive oil. 5 minutes per side. Second,  Remove it on the pan when cook and set it aside, let it cool. Chop it into smaller pieces and put in on a blender. Add one egg and one egg yolk. This will serve as the chicken paste. Next, melt the butter in the pan.  Put flour and mix it until it becomes yellow in color.  Pour in the milk and mix. When it is boiling, lower the heat and cook it for ten minutes more. Remove it on the stove, mix the chicken paste and add salt, pepper and nutmeg to taste. Beat the eggs together with its egg yolk. Use a wet spoon to scoop the mixture and shape it. Afterwards, dip it in the eggs before rolling it into the breadcrumbs. Fry it on the pan. Lastly, drain the excess oil by putting it in the paper towel and serve.
Like other foods, you can toast it and cook or fry it according to the crispness you want. Serve it the nicest way you can so that it will appear more delicious and presentable.
Usually, croquettes are fried food roll with the ingredients like mashed potatoes and/or ground meat, cheese and vegetables with the brown sauce. It also has spices and herbs and with the combination of milk, wine and beer. Sometimes, croquettes have special fillings like boiled eggs (Scotch eggs).
Oftentimes the croquettes that use mashed potatoes as fillings are often served as a side dish in winter meals on holiday like Christmas.
 But in fast food cuisines, the fillings of croquettes have variety based on béchamel sauce. In India, Croquettes are used to serve with a stew. They are mostly eaten as snacks and also sell as a street or road side food.
To make it easier for you to shape the croquettes, I’d recommend that you cool first the chicken mixture. When the mixture has firmed up, you should turn it out of the pan and then slice it using a knife. According to what I’ve read, it is better that you slice the mixture using a knife sprayed with a little cooking spray. Shape the croquettes. Chicken croquettes taste better if you add a little amount of lemon squeezed on it.

These Chicken Croquettes are healthy unlike those pork dishes that may harm your health because it adds fats to your body.
